If you like a stack of protein pancakes after your workout, you're going to absolutely love these banging banoffee winners from my new Graduate Plan.
60g self raising flour
20g Body Coach vanilla protein powder
1/2 tsp baking powder
1/2 tsp cocoa powder
1 medium egg
1 egg white
100g yoghurt, such as Greek, natural, soya
1/2 tsp coconut oil
75g banana (roughly 1 small banana), sliced
Combine the flour, protein powder, baking powder and half
of the cocoa powder in a bowl and make a well in the centre. Add the egg, egg white and 70g of the yoghurt and whisk until smooth.
Melt the oil in a non-stick frying pan then fry large spoonfuls of the batter for a minute on each side until puffed up and golden.
Layer the pancakes with the remaining yoghurt and the sliced banana then dust with the remaining cocoa powder.
